Versatile Summer Sauce
I enjoy preparing this versatile sauce in large batches to use throughout the summer.
Ingredients
- 1 cup drained crushed pineapple
- 1/2 cup sweet chili sauce
- 2 tsp soy sauce
- 1 tsp rice vinegar
- 1/3 cup brown sugar
- 1 tsp finely chopped fresh ginger
- 1 minced garlic clove
- 1/4 tsp optional spicy red pepper flakes
Preparation
- In a medium pot, combine the crushed pineapple, soy sauce, brown sugar, rice vinegar, and sweet chili sauce.
- Stir in the minced garlic and ginger, blending all the ingredients thoroughly.
- Place the pot over medium heat and bring the mixture to a gentle boil, stirring occasionally.
- Once boiling, reduce the heat to a simmer and cook for 10 to 15 minutes, or until the sauce reaches your desired thickness.
- For an extra kick of flavor, add red pepper flakes while the sauce simmers.
- Remove the pot from the heat and allow the sauce to cool slightly before serving.
Tips & Adjustments
For a spicier version, add a dash of hot sauce or more red pepper flakes. To enrich the flavor, consider incorporating a bit of sesame oil. For a tangier sauce, try adding some freshly squeezed lime juice. If you are mindful of your sugar intake, you can substitute brown sugar with honey or agave syrup.
