Ingredients

  • Fresh spinach leaves (a handful or as desired)
  • 2-3 eggs (depending on your preference)
  • 1/2 cup shredded cheese (cheddar or your choice of similar variety)
  • 1 onion, finely chopped
  • Salt and pepper, to taste
  • Olive oil or butter for cooking

Preparation

Prep the Spinach:

  1. Thoroughly rinse the spinach leaves to remove any dirt or grit. Drain and set aside.

Cook the Onion:

  1. Heat a small amount of olive oil or melt some butter in a skillet over medium heat.
  2. Add the finely chopped onions to the skillet and sauté until they become translucent and slightly golden, about 5-7 minutes.

Add the Spinach:

  1. Incorporate the fresh spinach leaves into the skillet with the onions. Cook until the spinach is wilted, stirring frequently to blend the flavors, approximately 2-3 minutes.

Cook the Eggs:

  1. Create small wells in the spinach and onion mixture. Crack an egg into each well and season with salt and pepper.
  2. Cover the skillet with a lid and cook the eggs to your preferred doneness. For fully set whites and runny yolks, cook for about 3-5 minutes.

Add Cheese:

  1. When the eggs are nearly done, sprinkle the shredded cheese over the spinach and eggs.
  2. Cover the skillet again for about a minute to allow the cheese to melt.

Serving:
