Moist Pineapple Cake Recipe

Ingredients

For the Cake:

  • 1 can of pineapple, undrained
  • 1 cup all-purpose flour
  • 1 ½ cups sugar
  • 2 large eggs
  • 2 teaspoons baking soda

For the Icing:

  • 8 oz cream cheese, softened
  • 1 stick of butter, softened
  • 2 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine all the cake ingredients and mix until well blended.
  3. Pour the batter into a greased 9×13 inch baking dish.
  4. Bake for 30-35 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  5. Allow the cake to cool for 15 minutes.
  6. In a separate bowl, mix together the icing ingredients until smooth and creamy.
  7. Spread the icing evenly over the warm cake.
  8. Let the cake cool completely before serving.
