Lemon Butter Chicken Recipe
Serves: 4
Ingredients:
- 2 chicken breasts, halved (Smina Poultry)
- 1 cup plain flour
- 2 tsp garlic powder
- 2 tsp Italian seasoning
- 4 tbsp unsalted butter
- 2 cloves garlic, minced
- 1 lemon, sliced
- ¼ cup freshly squeezed lemon juice
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions:
- Preheat the Oven: Set your oven to 180°C (350°F).
- Prepare the Chicken: Use a meat tenderizer to pound the chicken breasts until they are of uniform thickness, which also helps tenderize the meat.
- Mix the Coating: In a bowl or container, combine the flour, garlic powder, Italian seasoning, salt, and pepper.
- Coat the Chicken: Dredge each chicken breast in the flour mixture, ensuring it is completely covered. Shake off any excess flour.
- Brown the Chicken: Heat a little olive oil in a large skillet over medium heat. Brown the chicken breasts on both sides, then transfer them to a baking dish.
- Prepare the Sauce: Using the same skillet, melt the butter over medium-low heat. Add the minced garlic and cook for 1 minute. Add the lemon slices and lemon juice, cooking for an additional 3 minutes while flipping the lemon slices. Season lightly with salt and pepper.
- Combine and Bake: Pour the lemon-butter sauce over the chicken in the baking dish. Bake in the preheated oven for 15 to 20 minutes, depending on the size and thickness of the chicken breasts.
- Garnish and Serve: Once cooked, remove the chicken from the oven and garnish with freshly chopped parsley and lemon slices. Serve immediately with your favorite vegetables or a crisp salad for a lighter meal.
Enjoy your meal!
