Lamb Chops with Mustard Thyme Sauce

Ingredients:

  • 8 lamb chops
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves, chopped (or 1 teaspoon dried thyme)
  • 1/2 cup chicken broth
  • 1/4 cup Dijon mustard
  • 1/4 cup heavy cream

Instructions:

Prepare the Lamb Chops:

  1. Season both sides of the lamb chops with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the lamb chops to the skillet and cook for 3-4 minutes per side, or until they reach your desired level of doneness. Remove the lamb chops from the skillet and set aside.

Make the Sauce:

  1. In the same skillet, add the minced garlic and thyme. Cook for about 30 seconds until fragrant.
  2. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
  3. Stir in the Dijon mustard and heavy cream, mixing well to combine.

Combine and Serve:

  1. Return the lamb chops to the skillet, spooning some of the sauce over them.
  2. Simmer for 2-3 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  3. Serve the lamb chops hot, drizzled with the mustard thyme sauce.

Tips:

  • For enhanced flavor, marinate the lamb chops in a mixture of olive oil, garlic, thyme, salt, and pepper for a few hours before cooking.
  • Accompany the dish with roasted vegetables or mashed potatoes for a complete meal.
