Italian Grandma’s Slow Cooker Potatoes
I discovered this delightful recipe from my Italian grandmother, and it has become a staple in my kitchen ever since!
Ingredients
- 2 pounds of baby potatoes, quartered or halved
- 1/4 cup of olive oil
- 1 tablespoon of Italian seasoning
- 3 cloves of garlic, minced
- 1/4 cup of grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Preparation
- Place the halved or quartered baby potatoes into your slow cooker.
- In a small bowl, mix together the olive oil, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper.
- Pour the olive oil mixture over the potatoes, tossing them to ensure they are evenly coated.
- Cover and cook on low for 4-5 hours, or until the potatoes are tender and fully cooked.
- Before serving, give the potatoes a good stir and garnish with freshly chopped parsley for added flavor and a pop of color.
Tips and Variations
Feel free to adjust the spices according to your family’s taste. If you have picky eaters, you can reduce the amount of garlic or use garlic powder for a milder flavor.
For added variety, you can include additional vegetables such as carrots, onions, or bell peppers in the slow cooker.
For a cheesy twist, sprinkle some grated mozzarella over the top during the last half-hour of cooking. Enjoy!
