Herb-Infused Fried Potato Squares
Ingredients
- 4 large potatoes
- 2 cups fresh chopped parsley
- 1 tablespoon chicken broth or mashed green onions
- 2 tablespoons cornstarch
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- Oil for frying
Preparation
Preparing the Potatoes:
- Peel and grate the potatoes using a fine grater.
- Place the grated potatoes in a strainer, then wrap them in a paper towel or a clean cloth, and squeeze out as much moisture as possible.
Mixing the Ingredients:
- In a large bowl, combine the grated potatoes, chopped parsley, green onions (or chives), cornstarch, salt, and black pepper.
