Hearty Crock Pot Cowboy Soup Recipe

Ingredients:

  • 2 lbs Ground Beef
  • 4 Yukon Gold Potatoes
  • 2 Cans Mixed Vegetables (undrained)
  • 1 Can Sweet Corn (undrained)
  • 1 Can Condensed Tomato Soup
  • 1 Can Diced Tomatoes
  • 1 Can Cut Green Beans (undrained)
  • Pinch of Salt
  • Dash of Pepper
  • 2 Tablespoons Sugar

Instructions:

Step 1: Peel the Yukon Gold potatoes and cut them into small cubes. In a skillet, brown the ground beef and drain the excess fat. Transfer the browned beef and cubed potatoes into a large slow cooker.

Step 2: Add the cans of mixed vegetables, sweet corn, condensed tomato soup, diced tomatoes, and cut green beans into the slow cooker. Season with a pinch of salt and a dash of pepper to taste.

Step 3: For a unique twist, add 2 tablespoons of sugar to the mixture. Stir everything together thoroughly. Set the slow cooker on low and cook for 2-3 hours.

Recipe Notes:

You can substitute fresh or frozen vegetables for the canned ones if preferred. However, if using fresh or frozen veggies, add a can or two of beef stock to maintain the soup’s liquid content and flavor. If using canned vegetables, there is no need for additional liquid, as the undrained cans provide the necessary moisture and flavor.
