Grandma’s Italian Yogurt Cake

Ingredients:

  • 3 eggs
  • 1 pot of yogurt (125g)
  • 1 jar of sugar (70g)
  • 0.5 jar of milk (70ml)
  • 3/4 jar of oil (80ml)
  • 4 jars of all-purpose flour (270g)
  • 11g baking powder
  • 3-4 tablespoons raisins
  • 1 apple, diced
  • Lemon juice and zest
  • Granulated sugar
  • Cake pan (22-24cm)

Instructions:

  1. Preheat your oven to 180°C (350°F). Grease a cake pan (22-24cm) and set it aside.
  2. In a large bowl, whisk the eggs until light and frothy. Add the yogurt, sugar, milk, and oil, and mix until well combined.
  3. Gradually incorporate the flour and baking powder into the wet ingredients, stirring until you achieve a smooth batter.
  4. Fold in the raisins, diced apple, lemon juice, and zest, ensuring they are evenly distributed throughout the batter.
  5. Pour the batter into the prepared cake pan, spreading it evenly.
  6. Sprinkle granulated sugar over the top to create a sweet, crunchy crust.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
  9. Once cooled, you can spread a layer of jam or marmalade on top for an extra touch of sweetness.
