Fluffy Japanese Souffle Pancakes

Ingredients:

2 eggs (separated into yolks and whites)

2 tablespoons milk

1/4 teaspoon vanilla extract

2 tablespoons sugar

3 tablespoons all-purpose flour

1/4 teaspoon baking powder

A pinch of salt

Butter for serving

Honey or maple syrup (optional)


📋 Instructions:

  1. In a bowl, whisk together the egg yolks, milk, and vanilla.
  2. Sift in the flour, baking powder, and salt, and mix until smooth.
  3. In a separate bowl, beat the egg whites until they form soft peaks, then gradually add the sugar while whisking until stiff peaks form.
  4. Gently fold the meringue into the yolk mixture in 2–3 batches.
  5. Heat a non-stick pan over low heat and lightly grease it.
  6. Spoon the batter into tall, round mounds. Cover with a lid and cook for 4–5 minutes.
  7. Flip carefully and cook the other side for another 3–4 minutes until golden and puffed.
  8. Serve warm with a pat of butter and a drizzle of honey or maple syrup.
