Ingredients:
2 eggs (separated into yolks and whites)
2 tablespoons milk
1/4 teaspoon vanilla extract
2 tablespoons sugar
3 tablespoons all-purpose flour
1/4 teaspoon baking powder
A pinch of salt
Butter for serving
Honey or maple syrup (optional)
📋 Instructions:
- In a bowl, whisk together the egg yolks, milk, and vanilla.
- Sift in the flour, baking powder, and salt, and mix until smooth.
- In a separate bowl, beat the egg whites until they form soft peaks, then gradually add the sugar while whisking until stiff peaks form.
- Gently fold the meringue into the yolk mixture in 2–3 batches.
- Heat a non-stick pan over low heat and lightly grease it.
- Spoon the batter into tall, round mounds. Cover with a lid and cook for 4–5 minutes.
- Flip carefully and cook the other side for another 3–4 minutes until golden and puffed.
- Serve warm with a pat of butter and a drizzle of honey or maple syrup.
