- 3 large Eggs
- 250g (2 cups) of Flour
- 3 ripe Medium Bananas
- 150g (3/4 cup) of Sugar
- 80g (1/3 cup) Butter
- 15g (1 tablespoon) Baking Powder
- 1 teaspoon Vanilla Extract
- 60ml (1/4 cup) Milk
- 1 pinch of Salt
Instructions:
- Prepare the Bananas: In a bowl, add the chopped bananas and mash them with a fork until smooth. Set aside this banana puree.
- Mix the Wet Ingredients: In another bowl, beat the eggs with a whisk until they double in size. Add the vanilla extract, milk, sugar, and a pinch of salt. Melt the butter in the microwave and add it to the mixture. Whisk the mixture until all ingredients are well combined.
- Combine Dry and Wet Ingredients: Sift the flour and baking powder into the wet mixture. Using a spatula, fold the dry ingredients into the wet mixture until well incorporated. Add the reserved banana puree and mix thoroughly.
- Prepare for Baking: Grease a baking pan with butter and pour the batter into it. Preheat your oven to 190°C (375°F) and bake for about 40 minutes.
- Check for Doneness: Insert a toothpick into the center of the cake. If it comes out clean, the cake is done. If not, bake for a few more minutes and check again.
- Cool the Cake: Once baked, remove the cake from the oven and let it cool in the pan for about an hour before transferring it to a wire rack to cool completely.
