Deluxe Meatballs with Potatoes and Cheese
Ingredients:
- 3 large Russet potatoes, peeled and parboiled
- 1 white onion, finely diced
- 1 pinch dried paprika
- 1 pinch dried parsley
- 2 cups shredded mozzarella cheese
- 1½ pounds ground beef
- Salt and black pepper, to taste
For the Bechamel Sauce:
- 5 tablespoons butter
- 4 cups milk
- 4 tablespoons all-purpose flour
- 2 teaspoons salt
- ½ teaspoon nutmeg
Instructions:
Prepare the Bechamel Sauce:
- In a skillet, melt the butter over medium heat.
- Stir in the flour and cook for about 6 minutes until golden brown.
- Heat the milk in a separate pan until it is almost boiling.
- Gradually add the hot milk to the flour mixture, whisking continuously until smooth after each addition.
- Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes, stirring constantly.
- Season with salt, black pepper, and nutmeg. Set aside.
Preheat the Oven:
Preheat your oven to 400°F (200°C).
Prepare the Meatballs and Casserole:
- In a mixing bowl, combine ground beef, diced onion, dried parsley, a pinch of nutmeg, salt, and black pepper. Mix until well combined.
- Shape the mixture into meatballs of even size.
- Slice the parboiled potatoes thinly.
Assemble the Casserole:
- Line the bottom and sides of a round casserole dish with overlapping potato slices.
- Arrange the meatballs on top of the potato layer.
- Place additional potato slices between the meatballs.
- Pour the prepared bechamel sauce evenly over the meatballs and potatoes.
- Sprinkle shredded mozzarella cheese over the top.
Bake:
Bake in the preheated oven for about 15 minutes, or until the cheese is melted and golden brown.
Serve:
Remove from the oven and let it cool for a few minutes before serving.
