Classic Carrot Cake Recipe

Ingredients

  • 1 cup grated carrots
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 egg
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a cake pan for even baking.
  2. In a large bowl, whisk together the grated carrots, sugar, egg, vegetable oil, and vanilla extract until smooth and well combined.
  3. In a separate bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated. Be careful not to overmix.
  5. Slowly stir in the milk until a cohesive batter forms.
  6. Pour the batter into your prepared cake pan and bake for 40-45 minutes. Insert a toothpick into the center; it should come out clean when the cake is done.
  7. Let the cake cool completely before frosting.

Tips

  • For an extra moist cake, you can add an additional 1/4 cup of grated carrots or applesauce.
  • If you prefer a richer flavor, substitute brown sugar for half of the granulated sugar.
  • Toasted nuts, raisins, or chopped pineapple can be added to the batter for extra texture and taste.
