Cheese Potato & Smoked Sausage Casserole

Ingredients:

  • 3 cups potatoes, peeled, boiled, and diced
  • 4 teaspoons butter
  • 4 teaspoons flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 kilogram Velveeta cheese, cubed
  • 1/2 cup shredded sharp cheddar cheese
  • 1 pound skinless smoked sausage
  • 1/8 teaspoon paprika

Instructions:

  1. Prepare the Sausage:
    • Slice the skinless smoked sausage in half lengthwise, then cut into 1/2-inch “half moon” pieces.
    • Cook the sausage in a cast iron skillet over medium heat for about 15 minutes, stirring frequently until slightly browned.
  2. Prepare the Potatoes:
    • Place the cooked and diced potatoes into a 2-quart saucepan.
    • Add the cooked sausage to the potatoes and mix gently.
  3. Make the Cheese Sauce:
    • In a separate saucepan, melt the butter over medium heat.
    • Whisk in the flour until smooth and cook for 1-2 minutes.
    • Gradually add the milk, whisking constantly to prevent lumps.
    • Add the salt, pepper, and Velveeta cheese cubes. Continue to stir until the cheese is fully melted and the sauce is smooth.
    • Blend in the shredded sharp cheddar cheese and paprika, stirring until the cheese is melted and the sauce is well combined.
  4. Assemble the Casserole:
    • Pour the cheese sauce over the potatoes and sausage, mixing to ensure everything is evenly coated.
    • Sprinkle additional shredded sharp cheddar cheese on top, followed by a sprinkling of paprika.
  5. Bake:
    • Preheat your oven to 350°F (175°C).
    • Transfer the casserole to an oven-safe dish and bake for 35-45 minutes, or until the top is golden brown and bubbly.

Recipe Notes:

You can substitute 1/2 pound of sausage, sliced into 1/2-inch pieces or 12-ounce cubes if preferred.
