Cheese Chicken Nuggets
Ingredients:
For the Chicken Nuggets:
- 1 1/2 pounds chicken breasts (3 large pieces)
- 2 large eggs
- 1/3 cup mayonnaise
- 1/3 cup all-purpose flour, cornstarch, or gluten-free potato starch
- 4 ounces mozzarella cheese (1 1/3 cups, grated)
- 1 1/2 teaspoons fresh dill, finely chopped
- 1/2 teaspoon salt, or to taste
- 1/8 teaspoon black pepper
- 2 tablespoons light olive oil (or any high-heat cooking oil), for frying
For the Garlic Aioli (optional):
- 1/3 cup mayonnaise
- 1 garlic clove, pressed
- 1/2 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Preparation:
- Using a sharp knife, cut the chicken breasts into 1/3-inch thick pieces and place them in a large mixing bowl.
- In the mixing bowl, add the remaining batter ingredients: 2 eggs, 1/3 cup mayonnaise, 1/3 cup flour, 1 1/3 cups shredded mozzarella, 1 1/2 teaspoons chopped dill, 1/2 teaspoon salt, and 1/8 teaspoon black pepper. Mix until well combined.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
- Heat the oil in a large skillet over medium-high heat. Fry the chicken pieces until they are golden brown and cooked through, about 3-4 minutes per side.
- For the garlic aioli (if using), combine 1/3 cup mayonnaise, the pressed garlic clove, lemon juice, 1/4 teaspoon salt, and 1/8 teaspoon black pepper in a small bowl. Mix well.
Serve the chicken nuggets hot, with the garlic aioli on the side if desired.
