Cheese and Potato Fritters

Ingredients:

  • 2 large potatoes, peeled and grated
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup finely chopped green onions
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil, for frying

Instructions:

  1. Prepare the Potatoes:

    Grate the potatoes and place them in a clean kitchen towel. Squeeze out as much excess moisture as possible to ensure the fritters turn out crispy.

  2. Mix Ingredients:

    In a large bowl, combine the grated potatoes, shredded cheddar cheese, grated Parmesan cheese, chopped green onions, and minced garlic.

    Add the beaten eggs and mix thoroughly.

    Sprinkle the flour, baking powder, salt, and black pepper over the mixture and stir until well combined.

  3. Heat the Oil:

    Pour enough vegetable oil into a large skillet to cover the bottom. Heat the oil over medium-high heat until it reaches approximately 350°F (175°C).

  4. Form and Fry the Fritters:

    Using a spoon or your hands, scoop about 2 tablespoons of the potato mixture and shape it into a small patty or ball.

    Carefully place the fritters into the hot oil, ensuring not to overcrowd the pan. Fry each fritter for about 3-4 minutes per side, or until golden brown and crispy.

    Remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil.

  5. Serve:

    Serve the fritters hot, garnished with extra green onions or a sprinkle of Parmesan cheese if desired. These fritters are delicious on their own or paired with a dipping sauce like sour cream, ranch, or spicy aioli.
