Cajun Shrimp Scampi
Ingredients:
- 12 raw shrimp (adjust quantity to your preference; I prefer a generous amount in my pasta)
- 1 serving of pasta (linguine recommended)
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1/2 cup heavy cream
- Shredded Parmesan cheese
- 1/8 teaspoon basil
- Salt and pepper, to taste
- Flour (for thickening)
- Cajun seasoning
- 1/4 cup parsley
- White wine (not shown)
- Olive oil (not shown)
Directions:
- Heat a saucepan over medium-high heat. Add the butter, a drizzle of olive oil, and a splash of white wine, bringing the mixture to a boil.
- Add the minced garlic and cook for an additional 2 minutes.
- Add the shrimp to the pan.
- Generously season the shrimp with Cajun seasoning to your taste.
- Cook the shrimp until they turn pink on one side, then flip them and cook for another minute. Remove the shrimp from the pan, leaving the liquid behind.
- Add the heavy cream, basil, parsley, salt, and pepper to the pan.
- Bring the mixture to a boil and whisk in small amounts of flour until the sauce reaches your desired thickness.
- Reduce the heat to medium-low and return the shrimp to the pan.
- Toss the shrimp to coat them evenly with the sauce, then serve over the cooked pasta. Top with shredded Parmesan cheese.
