Blueberry Cream Cheese Egg Rolls Recipe!

Ingredients:

For the Blueberry Filling:

  • 2 cups fresh blueberries
  • ⅓ cup sugar
  • 1 tablespoon lemon juice
  • 7 tablespoons water, divided
  • 3 tablespoons cornstarch

For the Cream Cheese Filling:

  • 8 oz cream cheese, room temperature
  • ⅓ cup sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla

Other:

  • 12 egg roll wrappers
  • 2+ cups vegetable oil for frying
  • ¼ cup powdered sugar for dusting

Instructions:

  1. Blueberry Filling: In a saucepan, combine blueberries, sugar, lemon juice, and a portion of the water. Cook until berries burst. In a separate bowl, mix cornstarch with the remaining water, then add to the pan to thicken the mixture. Allow to cool.
  2. Cream Cheese Filling: Beat cream cheese, sugar, lemon juice, and vanilla until fluffy.
  3. Assemble: Place a layer of cream cheese followed by the blueberry filling onto each egg roll wrapper. Moisten the edges, then fold and roll.
  4. Fry: Heat vegetable oil in a pan and fry the egg rolls until golden brown. Drain excess oil and dust with powdered sugar before serving.
