Blueberry Cream Cheese Egg Rolls Recipe!
Ingredients:
For the Blueberry Filling:
- 2 cups fresh blueberries
- ⅓ cup sugar
- 1 tablespoon lemon juice
- 7 tablespoons water, divided
- 3 tablespoons cornstarch
For the Cream Cheese Filling:
- 8 oz cream cheese, room temperature
- ⅓ cup sugar
- 1 teaspoon lemon juice
- 1 teaspoon vanilla
Other:
- 12 egg roll wrappers
- 2+ cups vegetable oil for frying
- ¼ cup powdered sugar for dusting
Instructions:
- Blueberry Filling: In a saucepan, combine blueberries, sugar, lemon juice, and a portion of the water. Cook until berries burst. In a separate bowl, mix cornstarch with the remaining water, then add to the pan to thicken the mixture. Allow to cool.
- Cream Cheese Filling: Beat cream cheese, sugar, lemon juice, and vanilla until fluffy.
- Assemble: Place a layer of cream cheese followed by the blueberry filling onto each egg roll wrapper. Moisten the edges, then fold and roll.
- Fry: Heat vegetable oil in a pan and fry the egg rolls until golden brown. Drain excess oil and dust with powdered sugar before serving.
