Ingredients:

  • 4 large ripe red tomatoes, sliced 1/2-inch thick
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup cornmeal
  • 1 cup Panko breadcrumbs
  • 2 tsp salt, plus extra for seasoning
  • 1 tsp black pepper, plus extra for flavor
  • 1/4 tsp paprika (optional, for a hint of heat)
  • Vegetable oil for frying

Preparation:

  1. Prepare three shallow bowls. Place flour in one, beaten eggs in another, and combine cornmeal, Panko breadcrumbs, paprika, salt, and pepper in the third for uniform seasoning.
  2. Coat tomato slices lightly with flour, shaking off excess.
  3. Dip floured slices into beaten eggs, allowing excess to drip off.
  4. Press each slice into the breadcrumb and cornmeal mixture, ensuring both sides are well-coated for a crispy texture.
  5. Heat vegetable oil (about 1/2 inch deep) in a large pan over medium heat until hot but not smoking.
  6. Carefully place tomato slices into the pan without overcrowding. Fry for 2-3 minutes per side until golden brown.
  7. Transfer fried tomatoes to a paper towel-lined plate or wire rack with a slotted spoon to drain excess oil. Season lightly with salt and pepper while still warm.
