Ingredients:

  • 2 cups all-purpose flour
  • 3/4 cup maraschino cherries, loosely chopped and drained on paper towels
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2/3 cup mini chocolate chips
  • 1/2 tablespoon vanilla extract
  • 1/2 teaspoon salt

Instructions:

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, powdered sugar, and vanilla extract until smooth and creamy.
  3. Gradually add the all-purpose flour and salt to the butter mixture, mixing until a dough forms.
  4. Gently fold in the maraschino cherries and chocolate chips.
  5. Shape the dough into a log, wrap it with plastic wrap, and refrigerate for an hour. Then, slice into rounds.
  6. Bake the cookies on the prepared baking sheet in the preheated oven for 12-15 minutes, or until the edges are golden.
