Cheese Potato & Smoked Sausage Casserole
Ingredients:
- 3 cups potatoes, peeled, boiled, and diced
- 4 teaspoons butter
- 4 teaspoons flour
- 2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 kilogram Velveeta cheese, cubed
- 1/2 cup shredded sharp cheddar cheese
- 1 pound skinless smoked sausage
- 1/8 teaspoon paprika
Instructions:
- Prepare the Sausage:
- Slice the skinless smoked sausage in half lengthwise, then cut into 1/2-inch “half moon” pieces.
- Cook the sausage in a cast iron skillet over medium heat for about 15 minutes, stirring frequently until slightly browned.
- Prepare the Potatoes:
- Place the cooked and diced potatoes into a 2-quart saucepan.
- Add the cooked sausage to the potatoes and mix gently.
- Make the Cheese Sauce:
- In a separate saucepan, melt the butter over medium heat.
- Whisk in the flour until smooth and cook for 1-2 minutes.
- Gradually add the milk, whisking constantly to prevent lumps.
- Add the salt, pepper, and Velveeta cheese cubes. Continue to stir until the cheese is fully melted and the sauce is smooth.
- Blend in the shredded sharp cheddar cheese and paprika, stirring until the cheese is melted and the sauce is well combined.
- Assemble the Casserole:
- Pour the cheese sauce over the potatoes and sausage, mixing to ensure everything is evenly coated.
- Sprinkle additional shredded sharp cheddar cheese on top, followed by a sprinkling of paprika.
- Bake:
- Preheat your oven to 350°F (175°C).
- Transfer the casserole to an oven-safe dish and bake for 35-45 minutes, or until the top is golden brown and bubbly.

You can substitute 1/2 pound of sausage, sliced into 1/2-inch pieces or 12-ounce cubes if preferred.
