Lamb Chops with Mustard Thyme Sauce
Ingredients:
- 8 lamb chops
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme leaves, chopped (or 1 teaspoon dried thyme)
- 1/2 cup chicken broth
- 1/4 cup Dijon mustard
- 1/4 cup heavy cream
Instructions:
Prepare the Lamb Chops:
- Season both sides of the lamb chops with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the lamb chops to the skillet and cook for 3-4 minutes per side, or until they reach your desired level of doneness. Remove the lamb chops from the skillet and set aside.
Make the Sauce:
- In the same skillet, add the minced garlic and thyme. Cook for about 30 seconds until fragrant.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
- Stir in the Dijon mustard and heavy cream, mixing well to combine.
Combine and Serve:
- Return the lamb chops to the skillet, spooning some of the sauce over them.
- Simmer for 2-3 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Serve the lamb chops hot, drizzled with the mustard thyme sauce.
Tips:
- For enhanced flavor, marinate the lamb chops in a mixture of olive oil, garlic, thyme, salt, and pepper for a few hours before cooking.
- Accompany the dish with roasted vegetables or mashed potatoes for a complete meal.
