Classic Vegetable Soup
Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 large carrots, sliced
- 2 celery stalks, sliced
- 2 medium potatoes, diced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 can (14.5 ounces) diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Preparation
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic, cooking until softened, about 5 minutes.
- Add the carrots and celery, and cook for another 5 minutes.
- Stir in the potatoes, green beans, diced tomatoes, vegetable broth, thyme, and basil.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20 to 25 minutes, or until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
