Pan Fried Cod with Lemon Butter Sauce
Ingredients:
- 4 cod fillets (6 oz each), patted dry
- 2 tbsp olive oil
- Kosher salt and freshly ground black pepper
- 4 tbsp unsalted butter
- Juice of 1 lemon
- 2 tbsp finely chopped fresh herbs (parsley, dill, tarragon)
Instructions:
- Prepare the Cod Fillets: Pat the cod fillets completely dry using paper towels. Season both sides generously with kosher salt, freshly ground black pepper, and a mixture of finely chopped fresh herbs.
- Cook the Cod: Heat the olive oil in a large skillet over medium-high heat until it shimmers. Carefully place the seasoned cod fillets into the skillet. Cook each side for 4-5 minutes, or until the fillets are opaque and flake easily when tested with a fork. Once cooked, transfer the fillets to a plate and set aside.
- Make the Lemon Butter Sauce: Lower the heat to medium. In the same skillet, add the unsalted butter. Allow the butter to melt completely, then stir in the fresh lemon juice and additional chopped herbs. Taste the sauce and adjust seasoning with salt and pepper as necessary.
