Moist Pineapple Cake Recipe
Ingredients
For the Cake:
- 1 can of pineapple, undrained
- 1 cup all-purpose flour
- 1 ½ cups sugar
- 2 large eggs
- 2 teaspoons baking soda
For the Icing:
- 8 oz cream cheese, softened
- 1 stick of butter, softened
- 2 cups powdered sugar
- 2 teaspoons vanilla extract
- 2 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine all the cake ingredients and mix until well blended.
- Pour the batter into a greased 9×13 inch baking dish.
- Bake for 30-35 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Allow the cake to cool for 15 minutes.
- In a separate bowl, mix together the icing ingredients until smooth and creamy.
- Spread the icing evenly over the warm cake.
- Let the cake cool completely before serving.
