Strawberry Cheesecake Bars 🍰

Ingredients:
- 1 cup graham cracker crumbs
- 2 tablespoons granulated sugar
- 1/4 cup unsalted butter, melted
- 2 (8-ounce) packages cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, sliced
Directions:
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- In a bowl, mix graham cracker crumbs, 2 tablespoons sugar, and melted butter. Press mixture into the bottom of the prepared pan.
- In another bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
- Pour cream cheese mixture over the crust. Smooth the top with a spatula.
- Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
- Let cool completely, then refrigerate for at least 3 hours.
