Grilled Ribeye Steaks with Herb Butter

Ingredients

For the Steaks:

  • 4 ribeye steaks (about 1 inch thick)
  • Salt
  • Black pepper
  • Olive oil

For the Herb Butter:

  • 1/2 cup unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 teaspoon lemon zest
  • Salt and black pepper to taste

Preparation

1. Prepare the Herb Butter:

  1. In a small bowl, mix the softened butter, minced garlic, parsley, thyme, lemon zest, salt, and black pepper until well combined.
  2. Shape the butter mixture into a log using plastic wrap, twisting the ends to seal.
  3. Refrigerate the herb butter log for at least 30 minutes until firm.

2. Prepare the Steaks:

  1. Allow the steaks to reach room temperature by removing them from the refrigerator 30 minutes before cooking.
  2. Preheat your grill to high heat.
  3. Brush both sides of the steaks with olive oil, then season generously with salt and black pepper.

3. Grill the Steaks:

  1. Place the steaks on the preheated grill, cooking for 4-5 minutes per side for medium-rare or until your desired level of doneness.
  2. Check the internal temperature with a meat thermometer: 130°F for medium-rare, 140°F for medium, and 160°F for well-done.

4. Finish with Herb Butter:

  1. After grilling, let the steaks rest for 5 minutes.
  2. Slice the herb butter log into rounds and place one round on each steak while resting. The butter will melt, creating a flavorful sauce.

5. Serve:

Serve the steaks hot, accompanied by your favorite sides.

Enjoy your perfectly grilled ribeye steaks with luscious herb butter!
