Summer Sauce Recipe

Versatile Summer Sauce

I enjoy preparing this versatile sauce in large batches to use throughout the summer.

Ingredients

  • 1 cup drained crushed pineapple
  • 1/2 cup sweet chili sauce
  • 2 tsp soy sauce
  • 1 tsp rice vinegar
  • 1/3 cup brown sugar
  • 1 tsp finely chopped fresh ginger
  • 1 minced garlic clove
  • 1/4 tsp optional spicy red pepper flakes

Preparation

  1. In a medium pot, combine the crushed pineapple, soy sauce, brown sugar, rice vinegar, and sweet chili sauce.
  2. Stir in the minced garlic and ginger, blending all the ingredients thoroughly.
  3. Place the pot over medium heat and bring the mixture to a gentle boil, stirring occasionally.
  4. Once boiling, reduce the heat to a simmer and cook for 10 to 15 minutes, or until the sauce reaches your desired thickness.
  5. For an extra kick of flavor, add red pepper flakes while the sauce simmers.
  6. Remove the pot from the heat and allow the sauce to cool slightly before serving.

Tips & Adjustments

For a spicier version, add a dash of hot sauce or more red pepper flakes. To enrich the flavor, consider incorporating a bit of sesame oil. For a tangier sauce, try adding some freshly squeezed lime juice. If you are mindful of your sugar intake, you can substitute brown sugar with honey or agave syrup.
