Best Ever Pepper Steak
Ingredients:
- 1/4 cup low-sodium soy sauce
- 2 tablespoons rice wine vinegar
- 4 teaspoons packed brown sugar
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil, divided
- Kosher salt
- Freshly ground black pepper
- 1 pound flank steak, thinly sliced against the grain
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon freshly minced ginger
- Cooked white rice, for serving
Directions:
- Prepare the sauce: In a medium bowl, combine soy sauce, rice wine vinegar, brown sugar, and cornstarch. Whisk until well blended and set aside.
- In a large skillet over high heat, warm 1 tablespoon of vegetable oil. Add the sliced flank steak, season with salt and pepper, and cook until evenly browned and cooked through, approximately 8 minutes. Transfer the cooked steak to a plate.
- Add the remaining tablespoon of oil to the skillet along with the sliced red and green bell peppers. Sauté until the peppers are tender, approximately 4 minutes. Stir in the minced garlic and ginger, cooking until fragrant.
- Return the cooked steak to the skillet and pour the prepared sauce over the ingredients. Stir well to coat the steak and vegetables in the sauce, allowing it to thicken and become glossy, about 2 minutes.
- Serve the pepper steak over cooked white rice.
