Southern Deep-Fried Lobster
Ingredients:
- 2 whole lobsters (about 1-1.5 lbs each), cleaned and cut into large pieces
- 1 cup buttermilk
- 2 cups all-purpose flour
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and freshly ground black pepper
- Oil for frying (vegetable or peanut oil recommended)
Directions:
- Marinate the Lobster: In a large bowl, submerge the lobster pieces in buttermilk and let them soak for about 30 minutes to tenderize the meat.
- Prepare the Coating: In another bowl, combine the flour, Cajun seasoning, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
- Heat the Oil: Preheat the oil in a deep fryer or a large pot to 375°F (190°C).
- Coat the Lobster: Remove the lobster pieces from the buttermilk, letting any excess drip off. Dredge each piece thoroughly in the seasoned flour mixture until well coated.
- Fry the Lobster: Carefully place the coated lobster pieces into the hot oil. Fry in batches to prevent overcrowding, cooking each piece until golden brown and crispy, about 3-4 minutes per side.
- Drain and Serve: Use a slotted spoon to transfer the fried lobster to a plate lined with paper towels to drain any excess oil. Serve hot with your choice of dipping sauces, such as remoulade, cocktail sauce, or simply a squeeze of lemon.
