Classic Carrot Cake Recipe
Ingredients
- 1 cup grated carrots
- 1 cup sugar
- 1 teaspoon baking powder
- 1 egg
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 cup milk
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a cake pan for even baking.
- In a large bowl, whisk together the grated carrots, sugar, egg, vegetable oil, and vanilla extract until smooth and well combined.
- In a separate bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated. Be careful not to overmix.
- Slowly stir in the milk until a cohesive batter forms.
- Pour the batter into your prepared cake pan and bake for 40-45 minutes. Insert a toothpick into the center; it should come out clean when the cake is done.
- Let the cake cool completely before frosting.

- For an extra moist cake, you can add an additional 1/4 cup of grated carrots or applesauce.
- If you prefer a richer flavor, substitute brown sugar for half of the granulated sugar.
