Ingredients

  • 1 whole chicken (4-5 lbs)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 lemon, quartered
  • 4 cloves garlic, peeled

Instructions

  1. Prepare the Chicken: Rinse the chicken thoroughly, inside and out, and pat dry with paper towels. Remove any giblets.
  2. Create the Seasoning Paste: In a small bowl, combine the olive oil, salt, black pepper, paprika, garlic powder, onion powder, dried thyme, and dried rosemary.
  3. Season the Chicken: Rub the seasoning paste evenly over the entire chicken.
  4. Stuff the Chicken: Place the lemon quarters and peeled garlic cloves inside the cavity of the chicken.
  5. Cook in the Slow Cooker: Position the seasoned chicken breast-side up in the slow cooker. Cover and cook on low for 6-7 hours, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
  6. Optional Crisping: For crispy skin, transfer the cooked chicken to a baking sheet and broil for 3-5 minutes, watching closely to prevent burning.
  7. Rest and Serve: Allow the chicken to rest for 10 minutes before carving and serving.
